When I go to a festival I like to take delicious, healthy snacks which I can carry with me. Festivals can be a place where people (including me) can overindulge, so this recipe should help you stay on track and keep hunger at bay whilst at your favourite festivals this summer.
So many of the shop bought granola bars are full of sugar and a million additives, plus they can be ridiculously overpriced! Just like with my Homemade Energy Balls, I always attempt to make my own snacks to take with me to a festival. These are healthy, delicious and super cheap to make! I use different nuts each time depending on what I have in my cupboard, plus I occasionally add dark chocolate chunks if I fancy a treat, but this is my go-to recipe for my homemade granola bars.
- 2 cups whole rolled oats
- ½ cup desecrated coconut
- 30g walnuts, roughly chopped
- 20g pecans, roughly chopped
- 20g dried cranberries
- 15g sunflower seeds
- ½ orange, squeezed
- ½ cup honey
- 2 tbsp coconut oil/almond butter
- 1 tsp vanilla extract
- 1 pinch of sea salt
1. Preheat the oven to 165°C (325°F) and line a baking tray with baking paper.
2. Place the oats, coconut, walnuts, pecans, sunflower seeds and orange juice in a medium bowl and mix until well combined. Transfer the oat mixture to the prepared baking tray and toast in the oven for 10 minutes or until the mix is brown and lightly toasted.
3. Meanwhile, heat the honey, almond butter or coconut oil, vanilla extract and salt in a medium saucepan over low heat, stirring continuously.
4. Once smooth and heated through, place the honey mixture into the medium bowl. Add the oat mixture and stir until well combined.
5. Add the dried cranberries or any other dried fruit you might use to the mixture.
6. Lightly spray a baking tray with cooking spray and pour in the granola mixture. Press the mixture with the back of a spoon to ensure that it is spread evenly within the dish.
7. Bake in the oven for approximately 15 minutes if you’re after crunchier granola bars or less if you prefer them to be a little chewier! Once cooked, allow the granola mix to completely cool before cutting into squares.
Store the bars in an airtight container whilst at the festival and they should last a few days (provided you don’t eat them all on day 1!)
